Parmesan Tortilla Crisps

This post is much like the snack that this post talks about. Quick, filling, addictive and easy to make. I saw this on Giada's show and wanted it immediately. Its a different thing that I saw it when I was on my No-Carb week and craved it more. I made this quite some time after that when A (who gets cranky without food) came back from work and for some weird reason (you could read it as laziness on my part if you are not judgmental), dinner wasn't cooked. We usually have an early dinner and dinner is done by the time he reaches home. It wasn't my fault really. He came in early that day, you see. He came in at 4. Now, who eats at 5 PM? So, before he exploded with hunger or changed the channel to watch 11 innings of random people playing ball and another million people chewing and spewing peanuts, I decided to take matters in my hands and made these, against his wishes. He is very systematic about his eating habits. He'd rather have 3 square meals a day than munch in between unless they are Indian snacks fed by his mother. Anyway, since I've made my point, let's move on. Now, you can scroll to see the pic, yes.

Ingredients

2-3 Tortillas - I used corn, since we usually use the multi grain ones for his lunch (No, I don't make Rotis everyday for him *anymore*)
Paprika/Chilli powder - 1 tbsp +
Salt/Garlic Salt - 1 tbsp
Dried herbs - I used oregano.
Parmesan cheese- A handful, grated
Olive oil - 1-2 tbsp
Coriander/Parsley - a sprig or two. I used coriander.

1. Make the herb-salt-paprika oil. Reduces preparation steps from 3 to 1. Heat the olive oil, add the herbs, salt and paprika and mix well. Let it sit for 2 mins. Meanwhile, preheat the oven to 350F

2. Line the tortillas like an assembly line on your cutting board. The idea is to make the preparation of the dish sound so complicated that only a systematic person like you can do it. So, do the show. Its worth it and makes life easy. Especially, when you have a cranky kid threatening to burst anytime.

3. Apply the herbed-salted- paprikad Olive oil on both sides of the tortillas - using a pastry brush makes it easier. But if you are like me, get your hands messy, so you can lick it off later. Or use a spoon or something, if you are one of those cleanliness nitpickers. If you do use a pastry brush, make sure the person you're making it for sees it. If you are using your hand, this job is best done discreetly.

4. Now, cut the well-oiled tortilla into strips or chips - whatever you prefer. I preferred strips to show that this was different from tortilla chips :D

5. Arrange on a greased baking tray and sprinkle Parmesan cheese on the strips. Bake for a good 5-10 mins. As soon as the strips start curling up or turning a little brown, switch off oven and let it stay for a good 2-3 more mins. It will get crisp on its own. you don't have to wait until the strips turn crisp or brown to switch off the oven. Like I did, the first time around. Well, you all learn from my mistakes, so be grateful now!

6. Serve after taking pictures even if the person you love most who you are making it for is ready to kill you with sheer hatred. What is the point of love, if you can't love someone who is ready to beat you up? You will always get your chance again, sometime. Or, most of the time.

Like it? Let me be a propah blogger and tell you how good this is for kids when they come back from school. Instead of feeding them junk and sugar, feed them some carbs with cheese. Its not bad when they're 10 and run around the whole day! :) No, I don't mean to compare A to a kid. I'm serious. So what if he's cranky when he's hungry, so what if doesn't take anything seriously, so what if he refuses to blog anymore (like a kid who's lost interest in his old toy), so what if he insists on baking sugary stuff and eating it, so what if he sleeps like a gorilla while I'm typing this out on a Sunday morning waiting for my bagels to come out of the oven! So what do you do when you need to vent? Do you make easy-peasy snacks like this? Or, do you make a post out of it? :P

Oh these sound fantastic! I'm not real big on regular tortilla chips, but I'd love to try out this formula with nutritional yeast in place of the parmesan...
